What are some questions to ask/things to look for before the first time you’re jumping ship that helped you decide whether it was worth it (other than remoteness, salary, and benefits)?

Between two offers, "Associate Principal" for m&a consulting in the Healthcare industry vs a Director at a F300 company doing M&A and Partnerships. Consulting pays about 50k more. What does the future look like in consulting? I am a bit nervous jumping from from "industry side" to the "consulting side".

Mid-level associate at a mid-size regional insurance defense firm practicing coverage litigation. Salary is capped b/c my firm only does I.D./coverage and has no direct-hire comm clients. Second round of interviews with a comm lit boutique where I would be the only associate with 5 partners. Other than partner track, salary/benefits, and switching from coverage to general comm lit, what qualities of the move should I be thinking about as I weigh my options? I've a question on what sections to put on a regular resume. I see some people are using consulting style resume for outside companies as well. Do you think it's a good idea to devide work experience by projets? Or is it better to have "projects highlights" separate from work experience.. something like: intro>functional expertise> project highlights>work experience>education?
